Beef Denver (aka “underblade”) was a great disappointment. The point of the cut is that it can be treated as fillet steak, cooked fast and rare, but isn’t as expensive, or it can be braised whole. This had been braised to death, so most of the flavour came from the red-pepper ketchup…
