I enjoyed the ganso tonkotsu, where the noodles come piled with slices of barbecue pork, spinach, nori, red ginger and sesame, spring and dried onions, wood ear mushrooms and half a soft-boiled egg (…) Shoryu’s tonkotsu is thinned with miso and so isn’t as thick, intense or velvety as the broth at hip Soho rival Bone Daddies, but it’s very good…

All the main courses offered, essentially, the same thing: tonkutsu (pork-bone soup stock) with barbecued pork and ramen noodles, plus egg, mushrooms, beansprouts, spring onion, sesame, ginger, nori and mayu garlic oil…
