Circular tables next to the street are perfect for groups. At the back is a long wooden bar: perch here for tapas or to sample the all-Iberian drinks list…

Some critics have got very excited about the pork being served medium-rare and have banged on about botulism and what their mother told them about pork. But my mother didn’t tell me anything about pork, and I’ve always cooked it rare. Here it was full of flavour, nicely charred, and quite chewy…
