Better yet was a lemon brûlée, combining sorbet and cream fillings under a sugar topping made crunchy – evident in the tell-tale spiral scorch-marks and smoky flavour – with a proper quemador…

The classics were done to perfection; it’s surprisingly hard to find good tortilla even when eating out in Spain, yet El Pirata’s tortilla is very good indeed. Prawns in spicy garlic oil were succulent and seaside-fresh, and cured meats included a rich paprika chorizo and smooth slices of lomo…
