I had leg of lamb with aubergine and courgette (£13), which was fascinating:   the aubergine was a smooth, beige paste, deep and stylish, almost   intimidating. The lightly pickled courgettes lifted everything, made it   playful and unpredictable. The lamb was extraordinary – young but   complicated. The trio was exquisite: nothing obliterated anything else,   nothing was confusing, everything worked in harmony. If this was the measure   of the place, its popularity is no surprise…

Beef cheek ragu was deep and rich and applied to ribbons of silken pappardelle,  while the onglet with runner beans was transformed by the use of bagna  cauda – usually served as a kind of garlicky fondue – as a precisely  targeted sauce.
